Summer Nights at Abigail's

"If a June night could talk, it would probably boast it invented romance"
- Bern Williams

The busy summer season has begun at Abigail's and we are all looking forward to a successful few months.  There are some exciting changes in store for the hotel.  Last month we had new photography taken of all the guestrooms, public spaces and exterior, by photographer Alec Watson.  We are in the development stages of refreshing our brand, which will include a new logo, website and Marketing collateral, plus many technological improvements including a new website booking engine.

As Hotels tirelessly strive to gain new business, we at Abigail's, would like to thank our past and repeat guests who have helped make Abigail's what it is today.  We'd like to celebrate these guests with a chance to win a 2 night stay in one of our Honeymoon Rooms!  Tell us your most memorable experience while staying at Abigail's and you will be entered into a draw.  The winner will be announced in July.

Enter by fax, email or mail.  All entries must be received by June 30, 2010.

JUNE RECIPE OF THE MONTH

Chef Victoria's Strawberry Cream Scones

Makes 16 scones

2 rounds

In a large mixing bowl, place

4 cups flour -I like to use 1/2 white, 1/2 whole-wheat

2 teaspoons salt

1-1/2 Tablespoons baking powder

¼ cup sugar

whisk together dry ingredients, stir in:

1 Cup finely chopped fresh strawberries/or whatever your heart desires - sweet or savoury

Stir in:

½ litre (2 cups) whipping cream

Mix together with wooden spoon, till a shaggy mass, not too dry, not too wet!

Shape into 2 soft dough balls, dust with surface with flour, kneading lightly. Shape into 6" diameter round. Brush with a little leftover cream, cut into 8 pieces each, place on parchment paper baking pan, & bake at 375 degrees, for 10 minutes, turn for 5-10 more, serve warm with fresh butter. Enjoy!

Cooking Tip of the Month

Here we are all getting ready for summer Barbecues and Picnics
and some food safety tips for us all to remember-

* Try to plan just the right amount of foods to take. That way, you
won't have to worry about the storage or safety of leftovers.

 * When taking foods off the grill, put them on a clean plate, not
the same platter that held raw meat.

 * When preparing dishes like chicken or cooked meat salads, use
chilled ingredients. In other words, make sure your cooked
chicken has been cooked and chilled before it gets mixed with
   other salad ingredients.

 * It's a good idea to use a separate cooler for drinks, so the one
containing perishable food won't be constantly opened and closed.

 * A cooler chest can also be used to keep hot food hot. Line the
cooler with a heavy kitchen towel for extra insulation and place
well wrapped hot foods inside. It's amazing how long the foods
will stay not only warm, but hot. Try to use a cooler that is
just the right size to pack fairly tightly with hot food so
   less heat escapes.

 * Wash ALL fresh produce thoroughly. When preparing
lettuce, break into pieces - then wash.

 * Cook foods to the required minimum cooking temperatures:really worth having an instant read thermometer!
     - 165 F > Poultry, poultry stuffing, and stuffed meat.
     - 160 F > Ground Beef, fish, and seafood.
     - 150 F > Pork and food containing pork.
     - 145 F > shell eggs and foods containing shell eggs.

  * Separate raw animal foods from other raw or ready-to-eat
     foods during storage and preparation.

  * Cool leftovers as quickly as possible. Reheat to
     165 F before serving again.

  * & BY ALL MEANS, REMEMBER THIS:
Bacteria on food will rapidly multiply when left at a
temperature between 45 F and 140 F. Avoid this danger
     zone as much as possible.

Here's to a great summer and delicious times with family & friends!

Enjoy! Chef Victoria
